Recipe: Summer Salmon Patty

This recipe is Jason’s, adapted from one he found online. He’s remixed it and made it his own, tried and tested to perfection. You can make it in as little as 10 minutes so what’s not to like?

Summer Salmon Patty
Prep Time: 5 minutes | Cook Time: 5 minutes | Total Time: 10 minutes | Servings: 4

Ingredients:

  • 2 can salmon, drained and flaked
  • 1 egg
  • 1⁄4 cup buttermilk
  • 1⁄3 cup self-rising flour
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1⁄2 – 1 pimento pepper to taste, finely chopped
  • 1⁄2 onion, chopped
  • 1⁄4 red pepper, chopped
  • fresh thyme
  • salt and pepper to taste
  • oil, for frying

Instructions:

  1. Mix all ingredients together well and shape into patties.
  2. Heat a little oil in a non-stick pan and cook until browned on both sides, about 4 to 5 minutes.
  3. Serve on a multi grain brioche bun and top with sprouted greens, avocado mayo, red onion and a touch of ketchup. Enjoy!

Tip: They can stick very easily because of the cheese so be sure to use a non-stick pan and keep an eye on them.
